Fine dining 餐廳一定有剝削勞工的情形、只要去吃 Fine dining 餐廳就是助長剝削?若主廚精進技藝或有更高追求,就一定會助長餐飲業中的勞動剝削嗎?上月討論現代 Fine dining 營運模式與無薪實習生制度弊病的專欄文章停在消費者的思考與選擇,刊出後引起不少討論,但也得到一些並非完全是我本意的看法。由於字數限制,一篇專欄不可能將所有觀點盡數討論,本月便就同一主題繼續深入討論現代 Fine dining 餐廳的瓶頸,並試論可能的未來發展。
