soufflés au chocolat

(recipe based on Claire Heitzler's soufflés au chocolat)

To be honest it was only my second time making soufflées. I am never a fan of meringue based pastries, but it was really something healing watching those soufflées babies grow in the oven. 

Soufflées are so "éphémère" as they start to deflate right after they're out of the oven. I made quite many this kind of desserts for my new projects, and it was a real challenge for my camera man. I don't know if this was because I love so plated plated desserts or just because my philosophy of life has totally changed during the years...that we should live the moment as every one of them counts.

cheesecake Satine

(recipe adapted from Pierre Hermé's "Flocon Satine")

pâte sucrée cuite et beurrée
pâte cheesecake
compote à la fruit de la passion et au kalamansi
crème légère au cream cheese
mirroir blanc
chocolat blanc

 

I made this cake for celebrating my mom's birthday. This is also the first cake that I've ever made for my family, thanks to the great help of Claire and Pierre.

I made this roll cake for the family of a good friend of mine, whom I haven't seen for more than two years. I am very happy that I took these photos beforehand as the cake was unfortunately crushed while traveling to his place.

cinnamon roll

it's just funny how I feel nostalgic about cinnamon rolls and the aroma of cinnamon as it was never part of my childhood memories. all the impressions I've got of this soft, spiced, and sweet bread were probably all from the movies I've watched, the books and news I've read, as well as the aroma I've smelled in McDonald's. how media and texts shape our ideas about things is actually a good topic of social research but I'm not going to go through the details here.

what I wanna share with you is the magic moment when the warm scent of cinnamon secretely spreadsi in the air while it is in the oven. that is probably one of my favorite moments of being a pâtissière. the moment that you feel blessed and fulfilled.

what made me even happier is that it is the first ever pastry (ok, a bread to be precise) that has been sold. and it was sold on the counter of my favorite coffeeshop, Boot Café, in Paris. given this wonderful start, I guess I can believe that I'll have a quite exciting 2016. ;)

last cake of 2015 - Strawberry Kenya black tea chiffon cake.

when talking about cakes, strawberry sponge cake is probably THE cake that me and many other Taiwanese and Japanese have in our minds. I always wanted to make one and finally did it on the New Year's Eve.

life as a pâtissière is never as sweet as it seems but I always remember that it is the smile on people's face and the delight that goes to people's heart that has brought me here. I hope my 2016 would continue to be filled with beautiful and sweet things and what I do would bring happiness to more people.

gingerbread Christmas tree and ginerbread men.

to be honest, it was the first time that I tasted a gingerbread cookie this year. I used to think that it looks more delicious than it actually tastes, but it is not the case in fact. I spent a whole evening making and decorating these cuties and gave them to my friends on Christmas Eve when they came for dinner. It was such a nice memory that I'd like to keep, together with the spiced scent filled in the air.

pecan pie

made this because I suddenly missed the delicious pecan pie I've had at Sugar Plum (probably my first-ever pecan pie in life) - the smooth and gooey filling together with the nutty caramelized pecans, which is totally devine. 

I also happened to come across a tutorial of the leaf pie crust designs on White One Rice Couple's website (probably linked via Food52) and would love to give it a try. It's really not a bad idea for a sweet Autumn afternoon, right?

matcha caramel spread

made this by an impulse thank to someone's Instagram pic. I really can't help with anything matcha.

see recipe below:

(for 60g of spread)
cream 60g
sugar 25g
glucose 8g

Put all three ingredients in a casserole. Stir continuously and cook till 115 degree C. Pour into sterilized jars. 


抹茶牛奶糖抹醬

(60g抹醬)
鮮奶油 60g
砂糖 25g
水麥芽 8g

將鮮奶油、砂糖與水麥芽一起放入鍋中煮至約115度C,中間需不斷攪拌。趁熱倒入消毒過的玻璃罐中。

1 minute microwave mug cookie

一分鐘微波蔓越莓白巧克力馬克杯餅乾

never really loved cookies until I tried this recipe with my favorite combination - cranberries + chocolat blanc. A super easy one that can be done in a mug in 5 minutes (including the mise-en-place)! <3 love  my microwave oven!
