【漬物讀書會】甜點師Ying C.╳蘋婆漬:以米糕粥和黑糖糕為靈感,搭配法式手藝

「對我來說,醃漬就是時間的魅力,食材會隨著時間增添厚度、轉換個性。」疫情期間,旅法作家陳穎(Ying C.)除了陷入為新書《法式甜點裡的台灣》反覆校稿的繁重環節,也動手做了醃漬食,掌握幾項簡單步驟,其餘交給時間,為日以繼夜的繁忙節奏,注入立體美妙的天然滋味。

除了製作梅子糖漿、梅子醬油以及各式水果酒之外,她還取經英國飲食作家Fuchsia Dunlop所編寫的四川泡菜食譜,「Fuchsia Dunlop曾在四川大學唸書,甚至到四川烹飪高等專科學校接受訓練,她的食譜非常詳盡且道地。」不論是出書、紀錄用餐體驗或日常生活,一向認真看待、不輕易放過自己的Ying,就連漬物食譜也多方比較後才進行實驗。
